National characters

I am Danish and would like to use our national characters æøå and ÆØÅ (I don't know, how they look like at your place). Now I use EN_ISO8859_1 but there must by a set like DA_ISO8859_1 or DK_ISO8859_1. How to do that ?
Else I have to say that the installation was easy and it looks fine, but it tooks its time to scan all about 6500 photos in full format (in fact the server gaveup), but I have them all in a lesser format (1024*768) and that's fine.
